You can use sulfites in organically grown wines. There are three standards. Only ONE standard prohibits sulfites and that is Organic Wine. We also have Made with Organic Grape wines - those can have small amounts of sulfites added and this standard corresponds very closely to the EU standard for organic wine. There is a third standard - Ingredients: Organic Grapes - which has the same restrictions on sulfite additions as conventional wines. Sulfites are not the defining idea underlying organic. It is the chemicals used in the vineyard that are the primary distinction. Lab tests show that conventional and sustainable wines have substantially higher levels of pesticide residues. While we also know that minute traces of pesticides may be found in organic products, evidence suggests that those come, for instance, from rainwater that has glyphosate in it. This is according to U.S. government research.
